the Paring Knife
Everyone has (or has had) a paring knife; they are an indispensable tool for meal preparation. The paring knife is used for peeling small round fruits and vegetables; they are also ideal for quartering and slicing apples or dicing small foods. Depending on the style of knife, the uses don't stop there; certain blades are specifically designed to handle intricate jobs, like fluted mushrooms, vegetable garnishes, or to enticingly present an exotic fruit. No matter what you're preparing, there is a paring knife for the chore. The most commonly used version is probably the 2-3/4 inch blade. Any similarity to other paring knives stops there, however; most paring knives have short, straight handles that can dig into your palm, causing pain and/or fatigue.
